Maple Walnut Frozen Yogurt Cake

This cake is just as easy as it is impressive. Candied walnuts, Canadian Maple syrup and mouthwatering Three of a Kind Vanilla frozen yogurt are three secret ingredients that turn this simple recipe into a stunner.

Equipment:

  • 9 or 10-inch springform cake pan
  • 9-inch standard cake pan
  • Parchment paper

Ice Cream Cake Tips:

  • Whenever possible it is best to form the layers of ice cream and ingredients the night before, to ensure your cake looks its best!
  • If you’re in a rush, you can always pick up dry ice in a cooler to freeze your ice cream in minutes instead of hours.
  • A pastry torch helps get the ice cream out of any pan/mold, but if you don’t have one, use a hairdryer.

Ingredients

  • 2L of Chapmans Three of a Kind Vanilla frozen yogurt
  • 2 cups apple pie filling
  • Two cups of whole or chopped plain walnuts
  • ¼ cup white sugar
  • ½ a lemon
  • 2 cups of Canadian maple syrup

Add 2-3 tablespoons of water into a small pot and add ¼ cup of sugar and bring to a boil. As soon as the sugar turns a light golden colour, add walnuts, stirring to coat completely. Add ¼ of a stick of butter, and finish with a ¼ cup of maple syrup.

Using a 9” springform cake pan with a round of parchment paper in the bottom, add candied walnuts in an even layer. Hold aside 3-4 walnuts for decorating the cake at the end.

Adding 2-3 tablespoons of water, reheat the pot and pour remaining sugar/maple reduction onto the walnuts and put into the freezer to set.

Fill a small bowl with water, and the juice of 1 lemon. Cut thin apple slices, removing the core with a small cookie cutter, and add to the water. Set aside for decoration at the end.

Once walnuts are cooled completely, add ½ of the Chapman’s 3 of a kind Vanilla 2L of frozen yogurt, spreading evenly, and let set in the freezer.

Once frozen yogurt has frozen again, spread the apple pie filling in and even layer, and top with the remainder of the 2L of frozen yogurt. Using a common 9” cakepan, press down firmly, and put back into the freezer.

Once frozen yogurt has set, heat up the sides of the springform cake pan to release the sides. Flip the frozen yogurt upside down and place on a platter with the walnuts facing up.

Arrange apple slices on top of the cake, as well as the walnuts set aside for decoration. Baste entire top of cake with maple syrup, and place in freezer until it is time to serve.
