Ice Cream Cookie Sandwiches

These fun little Ice Cream Cookie Sandwiches are easy to whip-up and totally scrumptious! Grab an assortment of your favourite Chapman’s Ice Cream flavours and get to work. Be creative – the options are endless (and guaranteed to be delicious😍)!

Ingredients

  • Chapman's Ice Cream- Any flavour (We used Chocolate Peanut butter Cup, Black Cherry and Cookies & Cream)
  • 2 1/4 cups of all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter
  • 3/4 cup firmly packed light brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup semi sweet chocolate chips

Preheat the oven to 375 degrees.

In a large bowl, combine flour, baking soda, salt , brown sugar and white sugar.

Create a hole in the middle of your dry ingredients and add in butter, eggs and vanilla. Fold in the flour mixture until the batter becomes smooth. Mix in your chocolate chips.

Role your cookie batter into a 1 inch ball and place them 2 inchs apart on your cookie sheet.

Bake for 10- 12 minutes or until the cookie is golden brown.

Once cookies have cooled, flip the cookie upside down and place a scoop of your choice of Chapman's Ice Cream on the cookie. Place another cookie on top to create a Ice Cream Cookie Sandwich!
