Layered Peppermint Chocolate Ice Cream Cake

  • ½ pint Chapman’s Ice Cream (We used Holiday Moments Peppermint Twist)
  • 1 Pound cake (store bought is fine!)
  • Whipped cream (We used canned)
  • ½ cup sliced strawberries, plus a few additional for garnish

Preparation Instructions

Remove Chapman’s Holiday Moments Peppermint Twist Ice Cream from the freezer to soften (around 15 minutes)
Slice pound cake horizontally into three layers.
Place the bottom layer into the lined loaf pan.
In a mixing bowl, gently combine 8-10 scoops of softened ice cream with sliced strawberries.
Spread ½ of the ice cream mixture over the bottom layer of pound cake and smooth the top.
Add the second layer of pound cake and top with remaining ice cream mixture.
Top with the top layer of pound cake.
Freeze until firm, around 4 hours.
To serve, top with whipped cream and garnish with strawberries.
